Nacho Mama’s Food Truck is definitely the defining food truck here in Peoria. I think it’s the first food truck that started here, but I could be wrong. I do know that they have some delicious sandwiches on their truck and I’m going to feature one of their top sellers that I featured back in June of 2016.

On this visit to Nacho Mama’s back in 2016, the food truck was parked in Glen Oak Park on a warm summer Sunday.

Heather served the sandwich up from the window of the truck while flashing a beautiful smile!

This is the Foghorn Leghorn sandwich. It’s a grilled cheese sandwich with green onion cheddar cheese, a chicken breast, strips of crisp, smokey bacon and it’s topped off with a dollop of Ranch dressing.

This is such a tasty grilled cheese sandwich!

The bread is crispy and buttery and the cheese is rich and creamy. Then add in the flavor of the juicy chicken breast, the smokey bacon and the zing from the ranch dressing and you have one of Peoria’s most flavorful and delicious grilled cheese sandwiches!
